That’s why I’m here to share one of my favorite cold salad dishes I’ve scooped up onto my plate at many a church banquet for potluck dinner.
All that said, I’ve never actually made this dish myself, and I’m super excited to give all 3 of these versions a try!
Summer Broccoli Salads
If you are in need of a simple, no-heat-required, summer side dish or easy lunch option, broccoli salad is it, you guys!
Not only is broccoli rich in antioxidants, but it’s also known to benefit overall health, making this a super healthy option too!
That said, this popular (and healthy) dish is a great option for everything from at-home lunches to those epic planned BBQ dinners at the lake.

No Mayo Broccoli Salad
In need of something dairy-free?
This first broccoli salad recipe can fit the bill, you guys!

While technically this no mayo broccoli salad via Vegetarian South does call for cheese, it’s completely optional, and leaving that part out makes this a completely dairy-free side dish!
That said, you can quickly put this one together for your family barbecue or church potluck with only a handful of simple staple ingredients.
From broccoli and red onion to dried cranberries and sunflower seeds, that’s seriously it, you guys!
Lastly, all you need is a little apple cider vinegar, maple syrup, and seasoning to kick the flavor up a notch or 2.
Not only does this one look good, but it also sounds incredibly easy!

Keto Broccoli Salad
While I’m not technically KETO, I truly can appreciate parts of this diet style.
So, whether you are KETO or simply love all things meat and cheese (that’s me!), this next one is totes for you!

This Keto broccoli salad – via My Rad Kitchen is definitely the one I’m most excited to shove into my mouth this summer.
It just looks so creamy and delicious!
All that said, you can create this incredible-looking concoction for your next summer lunch using a mixture of mayo, apple cider vinegar, monk fruit, cheese, bacon, sunflower seeds, seasonings, and, of course, the star of the show, broccoli.
I can’t even describe how excited I am for this one.
Chunks of cheese? Yes please!

Broccoli Quinoa Salad
Last, but certainly not least, I’ve got a powerhouse of a recipe for you guys!

As if the health benefits of broccoli weren’t enough, this broccoli quinoa salad -via Trop Rockin takes things up a few notches by inviting the incredible super food quinoa to the party!
This fiber-packed ingredient is great for digestion and makes the perfect pair with our already super nutritious main ingredient.
Create this health-conscious summer side dish using quinoa, white beans, broccoli, carrots, bell pepper, shallot, mustard, red and white vinegar, olive oil, tahini, salt, and ground coriander.
Not only does it look good, but it sounds pretty tasty, you guys!
