Healthy Summer Recipes

As a busy boss mom, I’m always on the lookout for healthy options for my family.

That said, I’ve been on a mission the past 2 summers to uncover the healthiest summer recipes I can.

While last year I mainly focused on healthy grilling recipes and refreshing popsicle recipes, this year I’m all about those side dishes, you guys!

So, here I am with the third group of summer side dishes I can’t wait to start putting on the menu.

Crisp Cucumber Salads

Cucumber salad recipes are what I’m talking about.

Sliced cucumbers

I have such strong memories of growing up with cucumber salad as a summer staple in our home.

My dad cooked up incredible burgers while my mom and all of us kids made sun tea and cucumber salad.

So, needless to say, this might be the set of recipes I’m most excited to add to my summer plate, you guys!

  • Traditional Cucumber Salad Recipes

This first recipe is what I would consider to be the most traditional cucumber salad recipe on the list.

While we sometimes did a ranch dressing-based cucumber salad, we also often did a vinegar-based salad as well.

That said, no matter our base, onions always made an appearance.

While I was technically born and raised in the Midwest, this good ol’ Southern cucumber salad (above) – via Vegetarian South reminds me of the cucumber salad recipe I grew up on as a kid!

This one calls for basic ingredients and can be put together in your home kitchen using cucumbers, red onion, apple cider vinegar, sugar, salt, black pepper, and the optional fresh dill.

Not only does it sound simple, but it sounds incredible, too, you guys!

Creamy summer cucumber salad

While vinegar (or ranch) based cucumber salad is my nostalgic choice for traditional, this vegan cucumber salad (above) via Moms Who Save looks like it could make a close second!

Again, this one uses basic ingredients and staples you can easily find in your home pantry or fridge.

You can throw this bad boy together using cucumbers, yogurt, or sour cream, onion, lemon juice, garlic, fresh dill, and a little salt and pepper.

  • Fruity Cucumber Salad Recipes

Ok, I’m gonna be totally honest with you, the idea of mixing fruit with cucumbers never crossed my mind before.

That said, I’m incredibly intrigued by these next 3 ideas.

First up in the fruit + cucumber category is this cucumber celery salad (above) via Bless this Meal.

This one not only looks good, but man, does it sound amazing!

You can mix this unique cucumber salad recipe up in your own home kitchen using cucumber, celery, green apple, dill, parsley, parmesan, sliced almonds, olive oil, lemon juice, Dijon mustard, lemon zest, and a pinch of sea salt.

While the ingredients list is a bit longer than the first 2, it sounds like my kind of flavor experience for the taste buds.

I cannot wait to give this one a try!

Next up in the fruity variety, we have this mango avocado cucumber salad via Veg Buffet.

This cucumber salad recipe calls for English cucumber, avocado, mango, onion, tomato, maple syrup, lemon juice, sesame oil, chili powder, garlic powder, a little salt and pepper, and mint leaves for garnish.

While I’m not sure I could get my fam on board to try this one (they simply aren’t avocado lovers like I am), the flavor combos certainly captivate me.

Last, but not least (or maybe it secretly is), is this watermelon cucumber salad (above) via The Short Order Cook.

Before I jump into the awesome ingredients list, I’ve gotta say, I am not a watermelon fan, you guys!

So, needless to say, I will not be trying this one, but I included it because it does sound like a great mixture of ingredients + many of you likely do love watermelon!

You can create this unique concoction using English cucumbers, watermelon, pepitas, red onion, olive oil, lime juice, red wine vinegar, Tajín seasoning, salt and pepper, and cilantro.

While not my preferred cucumber salad recipe, this one sounds like a great option for those watermelon lovers out there!

  • Show Stopper Cucumber Salads

Ok, so I wasn’t honestly sure what to call these next few cucumber salad recipes, you guys!

They are incredibly unique, and their list of distinctive ingredients impressed me, so showstopper cucumber salads it is!

First up on the showstopper list? This amazing-looking cucumber cous cous feta salad (above) via Modern Honey.

This one definitely makes my have-to-try list, you guys!

Just looking at the picture makes me hungry and I can’t get over that ingredients list.

Want to make this showstopper side for your next family BBQ?

Well, you can whip it up in no time with a little couscous, English cucumber, red onion, feta cheese, olive oil, lemon juice, red wine vinegar, garlic, salt, pepper, honey, oregano, and red pepper flakes.

This one totally sounds unique, fresh, and delish!

Well, it just wouldn’t be a healthy recipe roundup without a little chickpea action, now would it?

This cucumber chickpea salad (above) via Moms Who Save has a whole list of health-conscious ingredients!

Throw this one together with a little love, chickpeas, cucumber, bell pepper, feta cheese, olive oil, lemon, fresh dill, salt, pepper, and red pepper flakes.

Yum-o!

Very vibrant and colorful cucumber salad with green cucumbers, red radishes, and orange carrot shreds.

Have a radish lover in your midst? This next showstopper recipe is for them!

Whip up this colorful cucumber, carrot, and radish salad (above) via Bite on the Side using English cucumber, shredded carrot, red radishes, red onion, lemon, salt, pepper, garlic powder, sugar, and olive oil!

Not only is this one colorful, but its flavor notes sound bold and fresh, you guys!

Next on the showstopper menu, we have this Mexican cucumber salad (above) via Immagrints Table.

Wow is all I can say about this one, you guys!

Cool down with a Mexican-inspired bite after throwing this cucumber salad together in your own kitchen using cucumbers, red onion, jalapeno, cilantro, limes, olive oil, chili powder, and a dash of salt.

Mmm, mmm!

Make this incredible bowl of delight using corn, cherry tomatoes, cucumbers, red onion, parsley, olive oil, lemon juice, feta, and a little salt and pepper action.

This one seriously looks perfect for that summer buffet line, you guys!!
