Pumpkin is the Flavor of Fall

While pumpkin is technically one of my favorite flavors to enjoy year-round, that pumpkin love definitely gets ramped up every fall when I find new pumpkin products or recipes to try!

That said, fresh pumpkins are the way to go.

We have already cooked at least 5 this season, and I literally have a giant metal basket filled with pie pumpkins (and some fall squash) sitting in my kitchen as I type this.

They are just soooo good!

In the past, we have had to utilize canned pumpkin for all of our off-season baking needs, but now that we are in a house again, one of my main goals this fall is to can as much pumpkin puree as possible!

I am so stinkin’ excited, you guys!

From making homemade pumpkin spice lattes and pancakes to the traditional pumpkin pie and bread — the pumpkin flavors are strong in our home.

Pumpkin Pasta Recipes

While I may have considered myself an amateur pumpkin expert (is that a thing?) before, I’m starting to think I’m just an amateur pumpkin lover instead.

Considering the idea of pumpkin pasta never crossed my mind before this fall.

Since I have decided that for the remainder of 2025 + all of 2026, I am aiming to get more creative and health-conscious in the kitchen, my main goal has been to discover, try, and tweak as many new (and healthy) recipes as possible!

Creating pumpkin pasta is one of the ways I’m going to branch out and do just that.

That said, my main focus lately has been on creating healthy soup options.

I’ve already made acorn squash soup and butternut squash soup recipes, which have definitely never made my fall recipe board before, so I’m actually pretty proud of the progress I’ve made this far!

Pumpkin pasta is the next thing I plan to conquer, and these next 5 dishes are on my list!

  • Roasted Pumpkin Pasta

This one not only looks good, but it sounds super healthy and amazing!

This roasted pumpkin pasta – via Flavours Treat is made using pumpkin, tomatoes, garlic, rosemary, thyme, olive oil, salt, pepper, paprika, coconut milk, pasta, and pumpkin seeds for garnish.

This incredible pumpkin pasta sounds like an easy option for a weeknight dinner.

Not only can you use any pasta you have on hand, but you can easily make swaps where needed.

For example, due to our gluten-free lifestyle, I will make all these pumpkin pasta recipes using gluten-free pasta.

However, the recipe post also mentions other simple substitutions, such as swapping the coconut milk for vegetable stock and using butternut squash in place of the pumpkin!

I definitely can’t wait to try this one!

  • Pumpkin Mac & Cheese

Say what?? As a huge mac and cheese fan, this one sounds incredibly intriguing to me and will 100% make my fall recipe lineup!

The best part about this recipe? It sounds super easy, too!

This Instant Pot pumpkin mac & cheese – Via Recipes from a Pantry is made using macaroni noodles, pumpkin puree (fresh is always best), onion powder, butter, pumpkin pie spice, salt, cheddar cheese, parmesan cheese, milk, and heavy cream.

Then, of course, there are the optional toppings of toasted pecans and chives.

Talk about yum!!

  • Pumpkin Lasagna

If there were an award for most creative pumpkin pasta, this one would take it, you guys!

Not only is this pumpkin lasagna – via Athlete’s Lunchbox unique because of its use of pumpkin in the recipe, but it also calls for eggplant, which is a great transition veggie as it’s typically found in late summer/early fall!

You can cook up this creative concoction in your home this fall using lasagna sheets, marinara sauce, eggplant, pumpkin, olive oil, garlic, Italian herbs, mozzarella cheese, salt, and pepper.

What a unique blend, you guys!

  • Pumpkin Ravioli

Next on our fabulous list of pumpkin pasta recipes is this pumpkin ravioli – via What a Girl Eats.

This recipe is made using fresh pasta dough that calls for flour, eggs, and olive oil, and a ravioli filling recipe that uses pumpkin, ricotta cheese, parmesan or romano cheese, kosher salt, white pepper, and nutmeg.

For the finishing touch, there is a brown butter sauce recipe that calls for butter, lemon juice, sage leaves, hazelnuts, and Parmigiano Reggiano.

While this one may be a bit more work than the others, it sounds heavenly!

  • Vegan Pumpkin Pasta

This final recipe is one you won’t want to miss, whether you follow a vegan diet or not!

Our final pumpkin pasta recipe is this vegan pumpkin pasta – via Happy Kitchen.

This simple dish can be put together in a flash using pumpkin, olive oil, garlic, fresh thyme and rosemary, black pepper, pasta, mushrooms, raw spinach, vegetable broth, nutmeg, parmesan, and a little pumpkin oil.

Not only am I a lover of pumpkin, but I’m also a huge fan of mushrooms and spinach, so this one is right up my alley, you guys!
